Cooking with special nutrients with our elderly patients

On January 2017, Bright Vision Hospital's Dietetics department launched monthly cooking demonstrations for our elderly patients. During classes, patients learn how to incorporate healthy and nutritious ingredients in simple meals such as the Cheese & Vegetable omelette. The omelette recipe has ingredients rich in vitamin D and Calcium. 

Cheese & Vegetable omelette Recipe

 

  • 4 eggs
  • 2 fresh Shiitake mushrooms, thinly sliced
  • 1 tomato, diced
  • 1/4 cup of spinach (can be replaced with frozen vegetables of your choice)
  • 3/4 cup (65g) of grated Mozzarella cheese
  • 1/2 cup (125ml) of low-fat milk or calcium-enriched soy milk
  • 1 tablespoon of canola oil
  • 1 clove of garlic, chopped
  • 1/2 small onion, chopped
  • Pepper to taste
  • Cherry tomatoes (4) for garnish
